Assistant is a personal, self-hosted AI assistant: an iOS app that talks to a backend its owner runs on their own computer.
When you connect a Google account, Assistant can read your Gmail, Google Drive files, Google Calendar, Google Contacts and Google Tasks so the assistant can answer questions about them and notify you about new mail you care about. It asks only for read-only access and cannot send mail, change files, edit events or modify anything in your Google account.
